Basic ingredients for spicy chicken pasties

  • Rapeseed Oil: 1 medium onion, finely sliced,

  • 20g Fresh Ginger, grated
  • 1tbsp Garam Masala,
  • 1/2tsp Hot Chilli powder
  • 1/4tsp Ground Turmeric
  • 2 chicken breasts, skinned, boned, and 2 Medium Potatoes, peeled, and cut into small cubes
  • 150ml water
  • 3tbsp fresh coriander, finely chop –
  • Pastry Ingredients: 450g Plain Flour,
  • 2tsp Baking powder,
  • 1/2tsp salt
  • 175g cold butter,
  • 2 large egg yolks,
  • 125ml cold water,
  • Beaten Egg to Glaze

How to make spicy chicken pasties

  • Make the filling first – bring a saucepan of salted water over medium heat to boil.
  • After this, Peel the potatoes and cut them into small pieces.
  • Once the water has boiled, add the potatoes to the boiling water and bring it back to the boil. Cook the potatoes for five minutes or until they are tender.
  • Drain the potatoes, and then set them aside until you need them.
  • After this, Heat the oil in a large frying pan and fry the onion and garlic, ginger, and chili until tender.
  • Slice the chicken breast into small pieces. They will be going in a pasty so it is important to keep everything small. Stir the onion and chicken breast into the pan. Add the cornflour to the mixture. Add the spices and then the water, cooked potatoes, frozen beans, and water.
  • Allow the mixture to simmer for about 3-4 minutes, or until it is almost evaporated.
  • Season with chopped coriander and taste.
  • Allow cooling on one side.
  • Next, make the pastry. Now In a large bowl combine the plain flour with the baking powder and salt.
  • Combine the cold butter with flour. Now cut the butter into small pieces with a knife. Then, use your hands to rub the butter in until it looks like breadcrumbs.
  • Add the egg yolks to the well and some of the cold water.
  • Mix the mixture with a butter knife until it forms clumps. Add more water to make the mixture come together. Then, use your hands to combine the ingredients to form a softball. Wrap the mixture in plastic wrap and let it rest for 30 minutes. You can assemble the pastry once everything has cooled.
  • Divide the pastry into eight pieces and divide the filling between eight. Roll out the dough balls and add one-eighth of the filling.
  • Wet the edges with water. Press the edges together to make a pastie shape. Continue this process until you have eight pasties.
  • Transfer the pasties to a tray. Brush with the egg white from the pastry.
  • Bake in the oven at 200C/Gas 6 until golden brown, for between 25 and 30 minutes. As the pastry contains everything, serve with a simple salad.
