Basic ingredients for mary berry cornation chicken
- 2 cups / 300g cooked chicken, cut into cubes (see note)
- 1/2 cup/120g Full Fat Mayo
- 1/2 Cup / 60g Mango Chutney
- 1/2 Cup / 40g Sultanas
- 1/4 Cup / 30g Flaked almonds, optionally toast (can omit due to allergy reasons)
- 1 1/2 Tbsp Mild curry powder (you can use medium or hot curry powder if it’s spicy!)
- 2 medium-sized Spring/Green Onions, finely chopped 1 tbsp chopped Coriander/Cilantro
- 1/2 lemon, juice only Salt and Black Pepper, to taste
How to make mary berry cornation chicken
- Sauce: Combine mayonnaise, yogurt, mango juice, curry powder, lemon zest, salt, and pepper in a small bowl. Place on one side.
- Coronation Chicken: Place diced chicken, spring onion, and flaked almonds in a large bowl. Mix in the sauce until all is well combined. Serve: In a baguette or pita, wrap, sandwich with sauce, baked potato, leafy salad, or wrap.
