Basic ingredients for apple and frangipane tart

  • Crumb: 240g flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 155g cold butter
  • 6 tablespoons of cold water

  • 1 tablespoon vanilla
  • 1/4 teaspoon almond extract
  • 145g almond flour
  • 1/4 teaspoon salt
  • 2 apples
  • 3 tablespoons chopped almonds

How to make apple and frangipane tart

  • Mix the butter, sugar, salt, and small bits of cold butter in a bowl.
  • Mix the dry ingredients with warm water. Once the dough is formed, stop mixing it until it becomes a ball.
  • Wrap the dough in plastic wrap. Now Allow resting for at least one hour.
  • Once the dough has risen to a firm consistency, flour your work surface.
  • Roll out the dough to 1/4 inch thickness and approximately 1 inch larger than your tart pan.
  • I use a 9-inch tart pan with removable bottom.
  • Then, place the dough on the tart pan and press the dough into the edges. You will leave about 1/2 inch of dough at the pan’s edge.
  • Keep folding the dough in half and pressing it into the sides of your pan. The dough might shrink in the oven so make sure to keep the edge 1/8 to 1/4 inches above the lip.
  • To ensure that the tart is cold before baking, place it in the freezer for 20 minutes.
  • Pre-heat the oven to 350F. Place a sheet parchment on the bottom of the pan and add pie weights, dried beans, or rice. Bake the crust for 30 minutes.
  • While the crust bakes, make the filling. Use a paddle attachment to whip the butter and sugar together using a stand mixer. Next, add the vanilla and 2 eggs. Mix until well combined. Mix in the almond flour, salt, and stir.
  • After the crust has been baked, take it out of the oven and evenly spread the filling into the crust.
  • Slice the apples thinly and keep them together for the tart.
  • Place the apples in any way you’d like on top of the almond mixture. Sprinkle the almond filling and slices over the apples.
  • Bake the tart in the oven for 45-50 minutes. The crust and filling should have a light brown color.
  • Now Let the tart cool in the pan before taking it out. Serve the tart warm or cold by dusting it with icing sugar.
