- Place a medium-sized ring mold on a plate.
- Cut 6-8 strawberries and 6-8 blackberries.
- In a nonstick skillet, heat the chopped berries. Mix 8-10 blueberries with castor sugar, lemon juice, and salt. Cook for 2 to 3 minutes.
- Add some water to the mashed blueberries, and mix until soft and pulpy. Place in a bowl, cover, and let cool in the refrigerator.
- Blend the mixture of cooked berries to create a smooth paste. Strain the puree into a separate bowl.
- Use a cookie cutter of medium size to cut brioche slices.
- The remaining blackberries and strawberries should be halved.
- Dip prepared Brioche Roundels in the puree. Place one roundel into the cookie cutter. Place another roundel over the strawberries.
