Basic ingredients for sticky chicken with red peppers
- 4 cups chopped chicken
- 1 cup chopped celery
- 1 cup chopped red onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped mushrooms Salt and oil
- 1 – 28oz can tomato sauce 1 – 28 oz Can diced tomatoes
- 1/4 cup grated cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasonings
- 1 teaspoon Oregano
- 1/2 tsp parsley Black pepper
- 1 cup grated cheddar cheese to top
- 1 cup grated Parmesan cheese to top
How to make sticky chicken with red peppers
- Pre-heat oven to 350 degrees. Prepare bell peppers. Clean, halve and remove seeds and veins. On medium heat, heat oil.
- Add onion, celery, and carrots. Season with salt and pepper. Let veggies cook for about 5-7 minutes, or until tender. Stir in minced garlic and continue to cook for about 15 seconds.
- Let cool on the heat. Combine chicken, vegetables, tomatoes, cheese, and seasonings in a bowl. Combine well. Mix well. Top each pepper half with the chicken mixture.
- Bake at 375° for 45 minutes. Cover and bake. Take out of the oven.
- Now Sprinkle grated cheese on top of the chicken stuffed peppers. Bake covered for 15 minutes, or until cheese melts. Enjoy.
