Basic ingredients for sticky chicken with red peppers
4 cups chopped chicken
1 cup chopped celery
1 cup chopped red onion
1 cup chopped celery
1 cup chopped carrots
1 cup chopped mushrooms Salt and oil
1 – 28oz can tomato sauce 1 – 28 oz Can diced tomatoes
1/4 cup grated cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasonings
1 teaspoon Oregano
1/2 tsp parsley Black pepper
1 cup grated cheddar cheese to top
1 cup grated Parmesan cheese to top
How to make sticky chicken with red peppers
Pre-heat oven to 350 degrees. Prepare bell peppers. Clean, halve and remove seeds and veins. On medium heat, heat oil.
Add onion, celery, and carrots. Season with salt and pepper. Let veggies cook for about 5-7 minutes, or until tender. Stir in minced garlic and continue to cook for about 15 seconds.
Let cool on the heat. Combine chicken, vegetables, tomatoes, cheese, and seasonings in a bowl. Combine well. Mix well. Top each pepper half with the chicken mixture.
Bake at 375° for 45 minutes. Cover and bake. Take out of the oven.
Now Sprinkle grated cheese on top of the chicken stuffed peppers. Bake covered for 15 minutes, or until cheese melts. Enjoy.
