Basic ingredients for pineapple upside down pudding
2-3 tbsp golden syrup/maple sugar
6 pineapple rings (drain well)
150g butter
125g golden caster sugar/raw Sugar
2 eggs
175g self-raising flour, sifted with 1-2 tbsp milk
How to make pineapple upside down pudding
Preheat the oven to 180° Celcius Oil the ovenproof dish. To cover the base, drizzle in the golden syrup. Then top it with the pineapple rings.
Now Microwave the butter on high for 45 seconds. Place the melted butter and sugar into a bowl. Whisk it until smooth. Add the eggs one by one, a little flour at a time.
Mix in the flour and then add milk, a little at each time, until the mixture comes off the beaters easily.
Place the mixture on top of the pineapples. Bake in the oven for between 40-50 minutes or until the mixture is golden brown. Serve immediately hot out of the oven.
