Basic ingredients for marzipan christmas cake

  • The Glaze: Apricot Jam/Marmalade. Marzipan:2 cups + 2 tablespoons (200g/7oz) Ground Almonds
  • 1/2 cup plus 3 tablespoons (100g/3 1/2oz) Icing Sugar
  • 1/2 cup (100g/3 1/2 oz) Caster Sugar
  • 1 egg (medium)
  • A few drops of Almond Extract
  • 1 teaspoon Whiskey or Brandy, Rum, or Sherry
  • The Royal Icing:– 2 3/4 cups (400g/15oz Icing Sugar, Sieved
  • 2 Egg Whites
  • Lemon Juice (optional)

How to marzipan christmas cake

  • Glaze the cake with: To glaze the cake, brush on some marmalade or apricot jam.
  • Make the marzipan by following these steps: Mix the ground almonds, caster sugar, and icing sugar in a bowl. Stir until combined.
  • Mix the egg, almond extract, and whiskey in a separate bowl.
  • Mix the dry ingredients and pour them into a bowl.
  • Use your hands to bring the pieces together and form a ball.
  • Kneel for five minutes until the marzipan is smooth and nice.
  • Cling wrap the item and keep it at room temperature for one week.
  • Once you are ready to cover the cake with marzipan, brush the sides and top of the cake using apricot jam/honey/marmalade.
  • Before covering the cake with marzipan, fill any gaps with marzipan.
  • Roll out the marzipan to a thickness of 2 – 3 mm. It’s large enough to cover the Christmas Cake.
  • To ensure that the marzipan adheres to the cake, place it on top.
  • Remove excess marzipan from the sides of the cake. Extra marzipan can be decorated or grated to decorate your mince pies.
  • Now You can store the cake in an airtight container until ready to decorate it with royal icing.
  • Marzipan should be allowed to dry for at least a week before you add royal icing. If you don’t have time, leave the marzipan to dry for several hours before adding royal icing.
  • Make Royal Icing by following these steps: Mix the egg whites and the sieved sugar in a bowl.
  • You can add 1 teaspoon of glycerine to make a soft royal icing.
  • Mix for 5 minutes, until smooth and thick
  • Mix the mixture again until it becomes thick.
  • Add the royal icing to the top of the marzipan.
  • After this, Spread the royal icing over the top and along the sides of your cake using a palette knife. Make sure you cover all the marzipan.
  • Sprinkle some Christmas ribbon on the sides of the cake.
  • Decorate your Christmas tree with your favorite decorations.
