  • 1 1/2 cups yeast
  • 2 cups of warm Water
  • 1 1/2 teaspoons salt
  • 1 1/2 Tablespoons Caraway Seeds
  • 1 1/2 Cups Rye flour
  • 3 cups All-purpose Flour
  • 2 tablespoons Cornmeal for Dusting

How to make new york deli style rye bread recipe

  • First of all, Combine the yeast, water, and salt in a bowl with a stand mixer. To form a ball of dough that sticks to the sides, add 1 cup of all-purpose flour at a time. Now The dough should be soft but not stiff. It should also hold together without becoming too sticky.
  • Transfer to a large, lightly greased bowl. After this, Cover the bowl with a dishtowel, and let it rise for about an hour.
  • You can shape it into a loaf by rolling the dough over the edges and underneath. You should feel as if you are grasping the loaf with your two hands, and then pulling it inside with your thumbs. You can make a small loaf by pulling with your thumbs several times.
  • Sprinkle cornmeal on a pizza pan or cutting board. Let the bread rise for 40 minutes on the board. Pre-heat a pizza/baking pan in the oven to 450°F. Place a shallow plate on the rack under the baking stone.
  • In 1/4 cup of water, dissolve the cornstarch. Microwave for 45 seconds. Spread the cornstarch liquid over the loaf. Make several parallel lines.
  • Place the loaves directly on the stone. After you have placed the loaf on the stone, pour a large glass of water into the shallow saucepan below. You should be careful with your hands as the loaf will pop, steam and sizzle. Bake for 30 minutes, then close the oven door.
