  • 1 1/2 cups sugar
  • 2 teaspoons almond extract
  • 3 1/2 cups cake flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 large eggs whites, room temperature
  • 1 1/2 cups milk, room temperature

WHITE BUTTERCREAM FROSTING

  • 1 1/2 cups softened butter
  • 2 teaspoons almond extract
  • 4 cups powdered Sugar
  • 1 cup milk

How do you make mary berry white chocolate sponge cake

  • Grease three 9-inch pans. Place parchment paper on the bottom. Preheat the oven to 350°F.
  • After this, Using a hand mixer, cream butter and sugar in a large bowl. Add the almond extract.
  • Now Mix the eggs and milk in a bowl. Set aside.
  • Mix the cake flour, baking powder, salt, and another bowl.
  • After this, Mix 1/3 of the dry ingredients into the butter mixture. Continue mixing until well combined. Mix in half the milk mixture. Continue to add 1/3 of the dry ingredients, until well combined. Now, add the rest of the milk mixture. Mix the remaining dry ingredients into the hand mixer.
  • After this, Scrape the bottom and sides with a rubber spatula until everything is well combined.
  • Divide the batter between the three pans. Bake the batter at 350 degrees for 25-30 minutes or until a toothpick inserted in the center comes out clean. Now Allow to cool in the pans for five minutes, then transfer to a wire rack and let cool completely before frosting and layering.
