Basic ingredients for veggie cottage pie
- Olive oil 30 ml
- Chopped onion 1/4 cup
- Chopped garlic 1/4 cup
- Chopped carrots 1/2 cup
- Chopped tomatoes 1/2 Cup
- Mushrooms cut 1 by 4 half cup
- Green peas half cup
- Salt to taste
- Pepper powder to taste
- Cumin one tbsp
- Paprika one tbsp
- Dried thyme one Tsp
- Bay leaf one piece
- Tomato paste 1/2 cup
- Sugar one Tsp
- Water as required
- Boiled and mashed potatoes four medium potatoes
- Cream 50 ml
- Melted butter 1/4 cup
How to make veggie cottage pie
- In a large skillet heat olive oil. Add the onions, and garlic, and cook for a few minutes. Next, add the chopped carrots and cauliflower to the pan and stir. To this, add salt, pepper, and cumin.
- Add the bay leaf. Finally, add the tomato paste and a little water. Let the vegetables cook until tender. Add the sugar and stir in the green peas. Cook until the mixture is dry and then turn off the heat.
- Mix the mashed potatoes and season with salt, cream, butter, and butter. Place the vegetable mixture in a dish that is oven-proof and then spread the mash on top. Bake at 180°C until the mash browns. Serve immediately.
