  • Unsmoked Gammon, about 1.6kg 150g (5oz) light brown soft sugar
  • 500ml (17 FL 0z), cider
  • 2 bay leaves
  • 10 peppercorns

  • Place half of the sugar in the slow cooker. Then, add the gammon. The rest of the sugar can be rubbed over. Add the cider to the gammon.
  • Add the peppercorns and bay leaves to the gammon. Cover the slow cooker with a lid. Cook on high for 4 hours. Remove liquid from the slow cooker. Serve warm or cold with mash, greens, crusty bread, potato salad, or mustard.
  • Tip: You can also make the gammon delicious with a sticky glaze. Take off the fat layer from the gammon and brush it with 1 tbsp of each runny honey or wholegrain mustard. Cook for fifteenth twenty minutes in a preheated oven at 200degC/180degC mark 6.
