Porter cake is a moist, Irish-style cake that’s made with porter ale. The flavors of porter cake develop and improve over time. It usually tastes better just a few days after it is made. This is a fruit cake that is made from dried fruits, sugar, butter, and most important, Guinness, an Irish porter.
Basic ingredients for porter cake
- 450g plain flour
- 1 teaspoon baking powder
- 125g cherries
- 1 level teaspoon of mixed spices
- 8oz golden caster sugar
- 80z butter
- 1/2 pint Irish Stout
- 2 eggs beaten
How to make porter cake
- Preheat oven 180c/350f/ gas 4. Grease a 20cm (8″) round cake pan with greaseproof paper. In a large bowl, combine the flour, salt, and baking powder. Add the sugar.
- Mix the flour, salt, baking powder, and mixed spice in a bowl. Add the butter to the mixture. Finally, add the stout. Mix well. Now Transfer the mixture to a baking tray and bake for 30 minutes.
- NOTE: If the cake’s top is becoming too brown, you can cover it with grease-proof paper twice until it bakes. This cake is best enjoyed with buttery bread and a cup of hot tea.
