  • Add the shredded carrots into a medium-sized bowl. Add the eggs and vanilla to the bowl. Mix well until all is combined.
  • Now Combine the flour, baking soda, and cinnamon in a bowl.
  • Combine the wet ingredients with the dry. Fold in the flour using a wooden spoon. Continue folding until no dry flour remains.
