- Our homemade jam was made from wild blackberries that we picked ourselves. Allow the blackberries to soak in water for at least two hours. Add a teaspoonful of salt, and let it sit for another 2 hours.
- Then rinse the blackberries well and simmer them in a saucepan with the water and lemon for about 1-2 hours, or until they are softened and pulpy.
- Bring to a boil the caster sugar, stirring continuously. You can boil the jam to 105 degrees C, or you can do the wrinkle test by placing some jam on a plate. Let it cool down, then push it around with your finger. It is ready to be put in jars if it forms wrinkles when it is pushed against the blackberry jam.
