How do you make apple and cinnamon muffins recipe
- The first step is to combine all of the dry ingredients. Add 2 cups flour, 1 tablespoon baking powder, 1/2 tablespoon baking soda, 1/4 tablespoon salt, and 1 tablespoon cinnamon to a bowl. Whisk together and set aside.
- Using an electric mixer, whisk 2 eggs on high speed for a few minutes until they become pale and fluffy.
- Gradually add 1 cup of granulated sugar, continuing to beat for three more minutes. Well-beaten eggs make fluffy muffins.
- Then, add 1 tsp vanilla extract and mix the batter again on high speed, adding 1/2 cup heavy cream slowly.
- You can now add your dry ingredients to the batter, sifting in about one-third at a time with mixing in between each addition.
- Mix 3 tablespoons of unsalted melted butter into the dry ingredients once they are well incorporated.
- Chop up 3 cups of your choice of apples (Galla, honey crisp, or pink lady will work). Add the cubed apples to a bowl and mix with 2 tablespoons of lemon juice.
- Using a spatula, fold the cubed apples into the batter.
Now Using a large cookie scoop, scoop out the batter into muffin tins lined with cupcake liners. - To make the streusel, combine five tablespoons of all-purpose flour, one tsp cinnamon, a pinch of salt, three tablespoons of brown sugar, and two tablespoons of butter in a small bowl.
Then use a fork to mash all the ingredients together until they are crumbly and dry.
Bake the apple muffins for about 35 minutes at 350 degrees Fahrenheit with the streusel topping.
