Eve’s pudding was a combination of breadcrumbs and eggs, as well as fruit and sometimes suet. This simple pudding is easy to prepare and makes a great treat for both the house and the servants.
It is served with custard.

Basic ingredients for eves pudding recipe

  • Roughly 2 apples (170g),
  • 170g breadcrumbs,
  • 170g raisins
  • 2 eggs
  • 1tbsp brandy 100-140ml butter and flour Wine sauce or custard

How to make eves pudding recipe

  • Peel, core, and grate the apple. Mix with the milk and all other ingredients. Add the brandy (optional), and enough milk to make a stiff batter. Butter the pudding bowl and add the batter.
  • Cover the pudding basin with a moistened and floured pudding cloth. You can also use a piece of buttery baking parchment and a sheet foil to cover it. To allow the pudding to expand, leave a pleat.
  • Boil the pudding for three hours or steam it. Boiling the water should get to three-quarters of the basin. It should not be allowed to boil dry, or the basin could crack. Place the custard or wine sauce on a plate. Sprinkle some extra sugar with a sprinkler.
