Basic Ingredients for duchess potatoes

  • 2 1/2 lb (1.2 kg) Potatoes
  • 4 tablespoons 60g Butter, room temperature
  • 3 Egg whites
  • Salt to Taste
  • Black pepper to taste
  • 1/4 teaspoon Nutmeg
  • 2-3 spoons Chives, chopped

How to make duchess potatoes

  • Cut potatoes into small pieces. Place the potatoes in a large saucepan. Cover with cold water and add 1-2 teaspoons salt. Bring to boil. simmer until tender, about 30 minutes.
  • Preheat oven to 400F (200C).
  • After this, the potatoes dry for a few minutes before draining them. Now Transfer the potatoes to a large bowl. Mash with butter until well combined. Mix in egg yolks. Stir until smooth. Now Season the dish with salt, pepper, and nutmeg.
  • Transfer the mashed potatoes to a piping bag with a wide star tip. Pipe the mashed potato mixture onto a parchment-lined baking tray.
  • Bake for minutes 15-20, until golden brown. Notes: Do not heat the potato mixture. Otherwise, the yolks may cook.
