Basic ingredients for chicken in red wine

  • 6-8 Maryland chicken pieces, seasoned in salt and pepper
  • 2/3 bottle (500ml), good red wine
  • 2 sticks celery (chopped),
  • 2 cloves garlic (whole & unpeeled),
  • 100g button mushrooms
  • 2 bacon rashers (chopped),
  • 2 cloves garlic (whole & unpeeled),
  • 1 tbsp plain Flour
  • 600ml Chicken stock
  • 2 bay leaves
  • 1 1 tbsp Olive oil
  • Salt

How to make chicken in red wine

  • Pour the wine into a pot. Add the carrots, celery, and garlic. Reduce liquid volume by half and bring to a boil. After simmering, reduce heat to a gentle simmer.
  • Place the olive oil in a saucepan, or flame-proof casserole dish, and brown the chicken pieces. Turn only once. Set aside. Place bacon in the same pan and cook for one minute.
  • Cook one minute. Add the onion. Cook for five minutes. Now Stir in flour and cook for two minutes. Stir in the chicken stock. Strain the reduced wine mixture. Add the pieces of chicken. Cover the pot and simmer for approximately 50 minutes.
