Basic ingredients for cheese and vegetable pasta bake recipe

  • 10.5oz/300g Penne Pasta (or any other short-cut pasta),
  • 3x14oz/400g cans Chopped Tomatoes
  • 1.5 Cups / 150g Cheddar, grated or more
  • 1 cup / 100g Mozzarella 1 cup / 250ml vegetable stock 3.5oz/100g
  • EACH: Sliced Red Onion, sliced Peppers, and sliced Mushrooms (1lb/500g Veg total)
  • 2 tbsp Tomato Puree, (Tomato Paste the US)
  • 1 heaped tsp EACH. Dried Oregano, Dried Basil, minced
  • 1/2 tsp Chili Flakes, or 1/2 tsp sugar, or 1 tbsp Vegetable oil Salt & Black Pepper, Fresh Parsley to garnish

How to make cheese and vegetable pasta bake recipe

  • First In a large, deep frying pan heat one tablespoon of vegetable oil over high heat.
  • Now Once it starts to smoke, add in the remaining ingredients. Stir fry all your vegetables, 1lb/500g.
  • Stir the pan often to prevent the vegetable from steaming. You want the veg well browned but still firm. You can cook the veg properly if you simmer the sauce and bake it in the oven. Stir fry for another 2 minutes until garlic is browned.
  • Reduce heat to medium, and add 2 tbsp tomato purée. After frying the puree for about 1-2 minutes, add 3x14oz/400g cans of chopped tomatoes. Mix the puree with a little water and shake off any tomato juice.
  • Add 1 cup/250ml vegetable broth, 1 heaped teaspoon oregano and basil, 1/2 tsp sugar, chili flakes (or as needed), and salt and pepper (to your taste). After this, Stir it well and let it simmer for about 15 minutes, or until the mixture thickens slightly.
  • Add 10.5 oz/300g pasta to a pot of salted boiling water. Boil until al dente. It should be a little bit firm, otherwise,e it will become soft and mushy when you bake it. Combine sauce with the drained pasta.
  • Pre-heat oven to 200C/390F. Place half of the pasta in a baking dish. Top with 1 cup/100g mozzarella. Add the remaining pasta to the dish.
  • Sprinkle with cheddar. After this, Bake for 20 minutes or until the top is golden brown. Let cool, then add fresh parsley to the top.
