pineapple upside down pudding
Basic ingredients for pineapple upside down pudding
- 2-3 tbsp golden syrup/maple sugar
- 6 pineapple rings (drain well)
- 150g butter
- 125g golden caster sugar/raw Sugar
- 2 eggs
- 175g self-raising flour, sifted with 1-2 tbsp milk
How to make pineapple upside down pudding
- Preheat the oven to 180° Celcius Oil the ovenproof dish. To cover the base, drizzle in the golden syrup. Then top it with the pineapple rings.
- Now Microwave the butter on high for 45 seconds. Place the melted butter and sugar into a bowl. Whisk it until smooth. Add the eggs one by one, a little flour at a time.
- Mix in the flour and then add milk, a little at each time, until the mixture comes off the beaters easily.
- Place the mixture on top of the pineapples. Bake in the oven for between 40-50 minutes or until the mixture is golden brown. Serve immediately hot out of the oven.
